- 5 cups White Lily Flour, sifted
- 1 1/2 tablespoon Baking Powder
- 1 tablespoon Kosher Salt
- 1/2 cup Packed Lard, chilled
- 1 1/4 cup Buttermilk
- 3 tablespoon Unsalted Butter, melted
For Sausage Gravy
- 1 lbs. Jimmy Dean Hot Sausage
- 1/4 cup All-Purpose Flour.
- 2 cups Milk
- Salt, Black Pepper, and Red Pepper to taste
Step 1. Preheat oven to 500 degrees Fahrenheit.
Step 2. Put the flour, baking powder, and salt in a bowl and mix thoroughly.
Step 3. Add the lard to the dry mix, and quickly coat with your hands. Squeezing through your hands, mix the lard and dry micture until half the lard is in small chunks and half the lard is still in large pieces.
Step 4. Add buttermilk to the batter and stir quickly until the dough is blended and begins to stick together.
Step 5. Place the dough on a floured board and knead with hands 8-10 times until it becomes a cohesive mass.
Step 6. Gently flatten the dough with hands, and then use a rolling pan to flatten to a thickness of 1/2 inch.
Step 7. Cut biscuits out of the dough with a biscuit cutter. DO NOT twist the biscuit cutter. Do NOT reroll the scraps, just cook them as is for a coo's treat.
Step 8. Place the biscuits on a baking tray and place in the oven. Bake for 10-12 minutes or until the biscuits are golden brown.
Step 9. While the biscuits are cooking, dump the sausage into a pot and cook until brown.
Step 10. Once the sausage has been cooked, add the milk to the pot and bring to a slight boil.
Step 11. Add the flour and mix thoroughly. Add spices to taste.
Step 12. Once the gravy is boiling, remove from stove and allow it to cool.
Serve over a couple biscuits, and enjoy those cold November tailgates.
